Favorite Pumpkin Recipes

Do we have an understanding that I love pumpkin spice and everything nice? Or at least dark and creepy with a hint of nice?











Baked Pumpkin Doughnuts

Ingredients

2 c all-purpose flour⁣
1 tsp baking soda⁣
½ tsp baking powder⁣
½ tsp salt⁣
1 ½ tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp allspice
¾ c packed light brown sugar⁣
½ c granulated sugar⁣
½ c melted unsalted butter
2 large eggs, room temperature⁣
2 c (one 15 oz can) pumpkin puree⁣

How-To

1. Preheat oven to 350° F. Grease a donut tin with nonstick spray and set aside.
2. In a large bowl, whisk together the flour, baking soda, baking powder, salt and spices. Set aside.⁣
3. In a medium bowl, whisk brown sugar, granulated sugar and melted butter together until butter is absorbed.
4. Add eggs and vigorously whisk until combined.
5. Stir in pumpkin puree.
⁣6. Pour wet ingredients into the large bowl of dry ingredients and mix until no flour pockets remain (avoid over-mixing). Spoon or pipe batter into prepared donut tin.
7. Bake at 350° F for 12 to 14 minutes or until a toothpick inserted in the center comes out with little to no crumbs.⁣ Let the donuts cool in the pan for a couple minutes before transferring to a wire rack.
8. For the topping, whisk together the sugar and cinnamon. While the donuts are still a little warm, lightly brush them with melted butter, then generously coat the donuts in cinnamon sugar.

Tips

For the spices, if you don't want to purchase them all separately, just use pumpkin pie spice to taste. I would personally use a healthy dose.









Pumpkin Pie Crescents

Ingredients

1 roll Pillsbury™ refrigerated crescent rolls
½ cup canned pumpkin pie filling or pumpkin pie mix
1 egg yolk
½ teaspoon pumpkin pie spice
½ cup powdered sugar
1 tablespoon pure maple syrup
½-1 tablespoon milk

How-To

1. Preheat oven to 375°F and prepare a parchment-lined pan.
2. Combine pumpkin pie filling, egg yolk, and pumpkin pie spice.
3. Unroll crescents and place 1 slightly heaping tablespoon of pumpkin mix on each crescent.
4. Starting with the large end, roll the crescent over once and slightly pinch the sides to contain the filling. Continue rolling (a little filling might leak out, that's ok). Place on the prepared pan.
5. Bake until browned (about 10-12 minutes).
6. Meanwhile, combine glaze ingredients until smooth. Place in a small ziptop bag.
7. Let them cool for ~10 minutes. Snip off a corner of a baggie and drizzle the glaze over the crescents.












Pumpkin Crepes

Ingredients

2 Eggs
1 Cup Flour
1 Cup Milk
½ Cup Water
2 Tablespoons Melted butter
4 Tablespoons Canned Pumpkin (or more if desired)
8 oz Softened cream cheese
2 Cups Heavy Whipping Cream
½ Cup Powdered Sugar
Pumpkin Spice (sprinkle on top of crepes-optional)

How-To

1. In a large bowl mix all wet ingredients first then add in the flour. Mix well. Note: mixture will be runny.
2. Heat a small skillet to medium heat and then spray in with oil so that the crepe won’t stick.
3. Add about ¼ Cup of crepe mixture into the hot skillet and pick it up and swirl it into the size of the bottom of the pan.
4. Cook for about 30 seconds to a minute and then flip on the other side and repeat. Note: it should be just a tiny bit brown on some spots for it to be done.
5. Cook remainder of the crepe batter and then set aside.
6. To make the pumpkin filling whip the softened cream cheese in a large bowl. Set aside.
7. Whip the cold 2 Cups of heavy whipping cream with the ½ Cup powdered sugar until stiff peaks form.
8. Add whipped cream into cream cheese bowl and blend until mixed. At this point I like to reserve some of this mixture for piping some on top of the crepes, then sprinkling with the cinnamon. But, you could just use the remainder after you put the canned pumpkin in. I just like the look of the white.
9. Fold in the pumpkin (as much as you desire…taste as you go!)
10. Add filling to the crepe by lining the middle of the crepe and then roll it up.
11. Pipe some filling on top and then sprinkle with some pumpkin spice.
